Last week I described how my work took me offshore to a drilling rig in the middle of the Gulf of Mexico…and how I quickly discovered, they weren’t ready to start drilling and was sent home again. Well, I’m back on the rig, and guess what? They still aren’t ready to drill, but are getting there, slowly but surely! That means having to modify my training once again and keeping my energy and spirits up enough to keep on going and keep my body nourished best I can with the sub-par quality of rig food. I apologize for the late posting this week. I spent most of my week this week traveling, to and from New Orleans and to and from a drilling rig in the Gulf of Mexico. It was my first time offshore, and it ended pretty quickly after it started…drilling became delayed and therefore I was no longer needed out there and was asked to return in a “week or so”. Training Update – Week 6

Getting Back to Basics Bake Sale and Another Milestone Accomplished!

This week was broken up a bit by a four-day weekend for me for Labor Day (which Mark unfortunately had to work), but with Mark away, it gave me an excellent opportunity to “Labor over Labor Day” to bake for my “Monday Bake Sale” (Tuesday this week for obvious reasons…). Inspired to keep a theme going, I decided to do cookies this week, but instead of experimenting as I normally do, I decided to get “Back to Basics” with Basic Chocolate Chip Cookies and Oatmeal Raisin Cookies. We are keeping on track with our training as well, I’ve introduced Mark to yoga, which we plan on doing together at least once a week. We also participated in the Brian O’Neill’s Pub Run, which is a weekly 5k held on Tuesday evenings at Rice University. [Read More]

Labor Day…the day that (most) Americans celebrate the Labor Party. Well, actually it is now more of a celebration of the end of summer…but not here in Houston, where temperatures are still commonly getting up into the mid-90′s (today included)! Mark had to work today, so that left me to my own devices, yielding a lot of baking and preparing for dinner. Tonight’s dinner was the B4 Burger, recipe courtesy of the Austin American Statesman, served alongside sweet potato fries and grilled corn on the cob. Training Update – Week 5

Bring on the “Hills” (and the Baked Goods)!

This week started our second month of training and with that came our second third track practice where we were charged with a new challenge…hills! Everything else has been pretty quiet…we were unable to climb this week due to the pickup of our old fridge to be delivered to my parents in Pennsylvania (took forever). We’ve been really busy with training and work, so we actually had a whole 2 day period where our television wasn’t turned on at all (it’s normally on for only ~30 min/day right now…will change with the advent of College Football season). Fundraising has gone well this week, with the theme being contrast…Deborah Madison’s Banana Oat Muffins (diabetic-friendly) and Honey Whole Wheat Poundcake with Blueberry and Lemon Icing (shown above).  [Read More]
