Week #9: Keeping up Motivation Offshore + Vegan Mocha Cake Recipe

I’ll just start out with that this week was hard….really hard…but I’ve come out on the other end, no worse for the wear (I think…)! I was offshore until Wednesday, but luckily got home just in time for track practice. However, that required the most of my miles this week to be logged on the trusty rig treadmill. After track practice and dinner, I decided (like my normal crazy self) to bake a cake for a colleague who was leaving us for another company. Bring on the “Hills” (and the Baked Goods)!

This week started our second month of training and with that came our second third track practice where we were charged with a new challenge…hills! Everything else has been pretty quiet…we were unable to climb this week due to the pickup of our old fridge to be delivered to my parents in Pennsylvania (took forever). We’ve been really busy with training and work, so we actually had a whole 2 day period where our television wasn’t turned on at all (it’s normally on for only ~30 min/day right now…will change with the advent of College Football season). Okay…so the hubby and I decided to join the Daring Bakers as a fun activity to do with each other each month. So, this month, Mark was so pleasantly surprised to see that our first challenge would be cheesecake! He’s been wanting to try one for ages, but we never had a reason and I’m pretty lukewarm to the thought of cheesecake (i.e. not my favorite dessert). A Modern Classic with a Healthy Twist

Carrot Cake is my all-time favorite cake (except maybe an excellent chocolate Tres Leches). My husband makes an excellent carrot cake that comes directly from the Joy of Baking website. The most unfortunate thing is how much time and effort it takes, and how terrible it is for you (I did the calorie/macronutrient estimation over Thanksgiving, it’s atrocious). So, a few months ago we went to Ziggy’s Healthy Grill here in Houston and were amazed by their sugar-free carrot cake cookies.
