I must apologize for not posting my update last week as I had promised. I was honestly getting into a funk from not working out. Whenever I don’t get the exercise I need, I tend to get really tired, moody and easily frustrated. However, I’m finally out of my boot and easing back into my training, which makes for a much happier Stef! Training Update – Week 10

Breaking Records and Feeling Sore!

It’s been an interesting and tiring week in our household…our schedule pretty much has been: work, run, eat, sleep, repeat! The run part has finally started taking a bit more of a toll on my body, as has allergy season, which has hit me with full impact. We also were breaking records, both Mark and I ran the Susan Komen Race for the Cure on Saturday and broke our 5k race records (Mark by over 3 minutes)! All of these factors put together has yielded a very run down Stef…but not run down enough to keep me from baking for my Monday Bake Sale! Training Update – Week 6

Getting Back to Basics Bake Sale and Another Milestone Accomplished!

This week was broken up a bit by a four-day weekend for me for Labor Day (which Mark unfortunately had to work), but with Mark away, it gave me an excellent opportunity to “Labor over Labor Day” to bake for my “Monday Bake Sale” (Tuesday this week for obvious reasons…). Inspired to keep a theme going, I decided to do cookies this week, but instead of experimenting as I normally do, I decided to get “Back to Basics” with Basic Chocolate Chip Cookies and Oatmeal Raisin Cookies. We are keeping on track with our training as well, I’ve introduced Mark to yoga, which we plan on doing together at least once a week. We also participated in the Brian O’Neill’s Pub Run, which is a weekly 5k held on Tuesday evenings at Rice University. [Read More]

A bit over a month ago, we had our housewarming party. One of the recipes that got great reviews from ourselves and our guests was my adaptation on peanut butter cookies! Housewarming Party!

Breaking in our New House with a Good Old Fashioned Party…

So, we are well on our way to putting together our new house. We now have phone (like it matters in this day and age), DSL (matters), and cable (but not yet strong enough for digital…), and even a few curtains up (custom curtains = serious $$$)! Part of the reason we are getting settled in so fast is because I scheduled a housewarming party. We’ve officially entered the dog days of summer in Houston…nearly a continuous week of 90+ temperatures (most over 95F), no rain, and no relief from the heat in the short-term forecast. I love oatmeal raisin cookies…

When I was a kid, my grandmother always had oatmeal raisin cookies waiting for us! She was diabetic, so it was what she felt comfortable making with her dietary needs. I miss those days, she passed over 10 years ago, but I still remember those cookies. Well, since for my grandmother-in-law’s passing, I decided to create my own oatmeal cookies for my in-laws to enjoy (along with my double chocolate tofu cookies with cranberries and my honey wheat chocolate chip cookies). Mine are a bit unorthodox, but I’m an unorthodox person…blueberry oatmeal cookies! They cost a bit more, as dried blueberries can get pricey, but they definitely are worth it for a special occassion or to really cheer someone up. [Read More]

Sorry for the short hiatus…I’m going to work hard to update with my new recipes and clear out my photo inventory this week in the evenings. The reason for the hiatus was my grandmother-in-law’s death and funeral. We had to fly to Philly this past weekend to celebrate her life and I wanted to celebrate by cooking lots of cookies for my in-laws and my parents (who came to visit us one evening). The first of the cookies I tried was a honey wheat chocolate chip cookie recipe that I adapted from King Arthur Flour’s website (see the others…Blueberry Oatmeal Cookies and Double Chocolate Tofu Cookies with Cranberries).
