Cheesecake (DB Challenge)

Our Adaptation: Goat Cheese Cheesecake with Blueberry Balsamic Reduction

Okay…so the hubby and I decided to join the Daring Bakers as a fun activity to do with each other each month. So, this month, Mark was so pleasantly surprised to see that our first challenge would be cheesecake! He’s been wanting to try one for ages, but we never had a reason and I’m pretty lukewarm to the thought of cheesecake (i.e. not my favorite dessert). After much thought of how to “healthify” a cheesecake, we decided to make a goat cheese cheesecake!
