So, we are well on our way to putting together our new house. We now have phone (like it matters in this day and age), DSL (matters), and cable (but not yet strong enough for digital…), and even a few curtains up (custom curtains = serious $$$)! We’ve officially entered the dog days of summer in Houston…nearly a continuous week of 90+ temperatures (most over 95F), no rain, and no relief from the heat in the short-term forecast. Okay…so the hubby and I decided to join the Daring Bakers as a fun activity to do with each other each month. So, this month, Mark was so pleasantly surprised to see that our first challenge would be cheesecake! He’s been wanting to try one for ages, but we never had a reason and I’m pretty lukewarm to the thought of cheesecake (i.e. not my favorite dessert). After much thought of how to “healthify” a cheesecake, we decided to make a goat cheese cheesecake! I love oatmeal raisin cookies…

When I was a kid, my grandmother always had oatmeal raisin cookies waiting for us! She was diabetic, so it was what she felt comfortable making with her dietary needs. I miss those days, she passed over 10 years ago, but I still remember those cookies. Well, since for my grandmother-in-law’s passing, I decided to create my own oatmeal cookies for my in-laws to enjoy (along with my double chocolate tofu cookies with cranberries and my honey wheat chocolate chip cookies). Mine are a bit unorthodox, but I’m an unorthodox person…blueberry oatmeal cookies! They cost a bit more, as dried blueberries can get pricey, but they definitely are worth it for a special occassion or to really cheer someone up. [Read More]

Sorry for the short hiatus…I’m going to work hard to update with my new recipes and clear out my photo inventory this week in the evenings. The reason for the hiatus was my grandmother-in-law’s death and funeral. We had to fly to Philly this past weekend to celebrate her life and I wanted to celebrate by cooking lots of cookies for my in-laws and my parents (who came to visit us one evening). The first of the cookies I tried was a honey wheat chocolate chip cookie recipe that I adapted from King Arthur Flour’s website (see the others…Blueberry Oatmeal Cookies and Double Chocolate Tofu Cookies with Cranberries).
