Breaking in our New House with a Good Old Fashioned Party…

So, we are well on our way to putting together our new house. We now have phone (like it matters in this day and age), DSL (matters), and cable (but not yet strong enough for digital…), and even a few curtains up (custom curtains = serious $$$)! Part of the reason we are getting settled in so fast is because I scheduled a housewarming party. Chicken Taco Salad with Creamy Cilantro Lime Dressing: Yum!

It’s hard to develop a salad that is satisfying as a stand-alone dinner. However, it’s not impossible and I think I succeeded with this taco salad I made a few weeks ago. Fun in the Mud and an Awesome Summer Salad!

Today was the most satisfying run I’ve completed to date…the Mud Maxx 5k! This was the first year of the race, benefiting the Shriners Hospital, but the organizers did a good job getting most everything straightened out and the run went rather smoothly. The object of the race was not time (it was untimed), but to have fun and get as muddy as you could (given that we haven’t had rain in weeks, it wasn’t too muddy though). My First Attempt at Chicken Tortilla Soup: A Rousing Success

A few weeks ago (probably about 3 or so by now), I noticed I had a lot of semi-related things in the fridge to make for my “Batch Cooking Sunday”. Not quite sure what to do, I decided that I was going to at least boil some fresh chicken breasts in the fridge to make shredded chicken. Well, that got me thinking about trying my hand at soup…chicken tortilla soup to be exact! I searched far and wide on the internet for some base recipes to work with and couldn’t find any that quite fit the bill for me…so, I took matters into my own hands (which can be good or bad…)! Last weekend, I had the hankering to bust out the grill and grill up a nice burger…
Well, I’m avoiding ground beef right now, and didn’t have any ground bison defrosted, but we did have freshly ground turkey in the fridge, just waiting to be made into scrumptious turkey burgers! American Twists to a Classic Mexican Dish…

I was first introduced to calabacita con pollo at our favorite tex-mex restaurant, Sylvia’s Enchilada Kitchen (see capirotada and fajitas posts). It’s a wonderful and light dish, reminding me of a good light summer meal (much like my vegetarian penne). We had a lot of Mexican-style ingredients sitting around last weekend from a dinner party we hosted, and I thought it would be great to try a casserole combining “calabacita con pollo” and enchiladas…it was good…really good! So good in fact that my husband not only went up for seconds, but also took leftovers to work for lunch (it’s like pulling teeth to get my husband to veer from his sandwich lunches)! A Perfectly Light Summer Meal…(and Happy Mother’s Day…Lots of Love to my Momma!)

Finally…getting to post this wonderful recipe I developed before experiencing our nightmare of the past few weeks…
A few weeks ago, I was thinking that I really wanted baked ziti or baked penne (same difference in my book), but I didn’t want it with plain spaghetti sauce or with a heavy meat, such as ground beef or bison. So, I decided to try something different…baked penne with summer vegetables! I hadn’t seen anything else like it out there and now really wonder why…because it’s awesome! Perfect and light and makes lots of leftovers for lunches. I used some leftover homemade marinara sauce to add character and topped it off with, *gasp* full fat fresh mozzarella (you can indulge once in a while…it’s worth it…) and freshly grated Parmesan. A Healthy Take on the Stuffed Pepper…

Mark had to work on Easter Sunday, so we had our Easter dinner on Saturday…That left Sunday’s dinner up in the air. It was a beautiful day outside, so I wanted to spend a good chunk of the day enjoying it, so that left little time for actual dinner making/prep. I had a brain storm a few weeks ago about interesting dishes to try, and I came up with this idea of stuffing poblanos with ground turkey and black beans for a healthier version of the Tex-Mex (or Mexican) stuffed pepper.
