Bulgar Wheat Rolls:
You Won’t Believe They’re Whole Grain (and Vegan to boot…)

I must admit, I love bread…soft, warm, yeasty rolls fresh out of the oven. However, some just don’t seem to cut the mustard. Many are dry, brick-like, and *gasp* made fully with All Purpose Flour (APF for the non-foodies)! Well, I have fallen head over heals for these rolls, and guess what? I was able to make them vegan quite easily! Vegan or not, your family will fall in love with these rolls… [Read More]

Once again, hope everyone is enjoying their holiday weekend. Mark is back off to work today, and I’ll be back to work tomorrow, so…back to the grind…until Christmas! This past week actually proved to be easier to keep up our routine than we would have thought. With the multitude of “Turkey Trots” across the country, it’s hard not to find a race to keep up your fitness level over the holiday (not to mention allow you more special treats). Weeks 13-14: Healing and Easing Back into Routine…
Plus My First Success in Bread Baking!

I must apologize for not posting my update last week as I had promised. I was honestly getting into a funk from not working out. It’s my first time in over 10 years to dress up and play along with Halloween and me and my partner in crime are off to a “Triple Threat” party (Halloween, Housewarming, Birthday). I made my famous guacamole and pumpkin pie bars (recipe may come soon) to share. This year, I’m playing the part of “stupid and injured marathon runner” while Mark is playing the role of my coach. Our costumes are fantastically ghetto and only cost $15 between the two of us! [Read More]

Week 11: Getting into Double Digit Runs…and Learning to Slow Down
Plus a Special Pennsylvania Dutch Recipe

This week was the roughest week yet for us! Saturday was our first double digit run, clocking in at 10 miles! I felt great during the run for the most part and completed it at a great pace (1:34:36; ~9:30 min/mi pace). However, the rest of the day wasn’t as good. After our weekly brunch pilgrimage to Ziggy’s, I noticed that my ankle began to swell up…a lot! So, we did what we know is best for swelling, RICE! Rest, Ice, Compression, Elevation (+ anti-inflammatory). Little did I know this would be just the beginning of painful week… [Read More]
