Cardamom Coffee Cake:
A Near-Perfect Post-Saturday Run Snack!

Coffee cake…it was always a treat in our household. My Mom only made it on special occasions, but when she did, it seemed like it was always gone in a flash! Over the past few months, every now and again I’d all of a sudden crave coffee cake. Fortunately, it takes time to bake, so I never actually followed through with my cravings and let it go… [Read More]
Seemingly Odd Flavors Meld Well for this Summer Lasagna…

For some time now, I’ve been batch cooking every Sunday that I can so I can have lots of variety in my leftovers for lunch each week at work. I’ve finally decided that I’m going to do a weekly Sunday batch cooking post, for my “Batch Cooking Sunday’s”! This week’s Batch Cooking Sunday recipe is one that I came up with last week…Chicken Pesto Lasagna with Summer Vegetables. [Read More]
American Twists to a Classic Mexican Dish…

I was first introduced to calabacita con pollo at our favorite tex-mex restaurant, Sylvia’s Enchilada Kitchen (see capirotada and fajitas posts). It’s a wonderful and light dish, reminding me of a good light summer meal (much like my vegetarian penne). We had a lot of Mexican-style ingredients sitting around last weekend from a dinner party we hosted, and I thought it would be great to try a casserole combining “calabacita con pollo” and enchiladas…it was good…really good! So good in fact that my husband not only went up for seconds, but also took leftovers to work for lunch (it’s like pulling teeth to get my husband to veer from his sandwich lunches)! It’s, as most of my recipes, a highly adaptable recipe that can be modified to fit nearly any picky family. [Read More]
Move Over Huevos a la Mexicana…there’s a new Sheriff in Town!

One day I was reading about scrambling tofu as a scrambled eggs substitute. This intrigued me and I looked into recipes a bit further. Most of the recipes called for turmeric to give the “eggs” their golden yellow color. However, I was on a mission, for a Tex-mex style tofu dish that would please even the most unlikely tofu eater! I was craving Huevos a la Mexicana, so I figured why not try Tofu a la Mexicana?

A healthy and quick breakfast!
On my Friday’s off, I enjoy experimenting with new breakfast ideas. Today was no exception, but it had to be quick. Tomorrow I’m running a 5 mile race, so I needed to have time this morning to pre-cook my breakfast for tomorrow (my buckwheat pancakes).
I had developed an idea sparked by tortillas I bought some time back, a garlic herb tortilla produced by La Tortilla Factory. The idea was to fuse the Greek world with a Mexican-style twist… [Read More]
A (mostly) Venezuelan Valentine’s Day
Today is Valentine’s Day…
I don’t try to get caught up in the hype and try not to go out or get concerned whether I’m getting anything or not (I’m pretty low maintenance). However, I do find it a good time to try to make food at home as a special gesture. [Read More]
