Mud Maxx 5k

Fun in the Mud and an Awesome Summer Salad!

hosed_off

Today was the most satisfying run I’ve completed to date…the Mud Maxx 5k! This was the first year of the race, benefiting the Shriners Hospital, but the organizers did a good job getting most everything straightened out and the run went rather smoothly. The object of the race was not time (it was untimed), but to have fun and get as muddy as you could (given that we haven’t had rain in weeks, it wasn’t too muddy though). I’m also going to share with you my after-race lunch. A leftover mediterranean-style bulgar wheat salad we made last night that was just so delish I have to share it’s goodness with the world! Greek Style Frittata

Yet Another Use for Egg Beaters that Tastes Delicious!

plated11

Before you jump on me about cholesterol and the myths behind eggs being a source of bad cholesterol…hear me out… I like egg beaters. I love the taste, love the way you don’t have to beat them, just shake, measure, pour, done! I also love omelets, but have never tried making a frittata before. Well, this weekend, I was given inspiration from everyone on Foodgawker and Tastespotting with their lovely pictures of frittatas to make my first frittata, a greek-style one! [Read More]

Lamb Chops with Mint Yogurt Sauce

What Would Jesus Eat? (Plus, Happy Easter!)

easter

This year we had to celebrate Easter a day early (Mark works today), so we had dinner a day early…This year we tried something different than the old stand-by of ham and potatoes. We love ham and potatoes, but given that we had an afternoon to prepare a nice meal, we decided to try our hand at lamb chops! That gave me the inspiration to make it a Mediterranean/Middle Eastern themed meal…which is closer to what Jesus would have actually eaten (maybe…). It came out delicious!

We paired our lamb chops with a mint yogurt sauce, with sides of Israeli couscous (pearl couscous), and our lovely Greek salad. This paired nicely with Two Hands vineyard’s Angel Hands Shiraz (2007). [Read More]

Greek Food, Fast in San Antonio

demos

On Thursday, we arrived in San Antonio just in time for a late(ish) lunch. Without an idea of where to go first, we stopped by the B&B (to see the area) and checked UrbanSpoon on my iPhone to see what was quick, easy, and good in the area. Demos Greek Food was only 0.2 miles away and got great reviews for lunch. We both love good Greek food and sounded like a winner…we were right! [Read More]

Greek Salad

No Onion, No Problem, Still Tastes Great!

grksld

We needed a little something extra to go along with our Lamb Stuffed Bell Peppers, so we decided a nice Greek Salad would go great with our dinner. It’s a very simple side salad and you can even make your own salad dressing in <5 minutes! [Read More]

Spinach and Egg White Taco

A healthy and quick breakfast!
On my Friday’s off, I enjoy experimenting with new breakfast ideas. Today was no exception, but it had to be quick. Tomorrow I’m running a 5 mile race, so I needed to have time this morning to pre-cook my breakfast for tomorrow (my buckwheat pancakes).

I had developed an idea sparked by tortillas I bought some time back, a garlic herb tortilla produced by La Tortilla Factory. The idea was to fuse the Greek world with a Mexican-style twist… [Read More]

Valentines Dinner – part 1

I knew my husband was a keeper when I found out he loved to cook! Last night he cooked up a great special meal for me for Valentines Day. I’ll post recipes later when I get them from him, but it was relatively healthy and decadent.
