Bulgar Wheat Rolls:
You Won’t Believe They’re Whole Grain (and Vegan to boot…)

I must admit, I love bread…soft, warm, yeasty rolls fresh out of the oven. However, some just don’t seem to cut the mustard. Many are dry, brick-like, and *gasp* made fully with All Purpose Flour (APF for the non-foodies)! Well, I have fallen head over heals for these rolls, and guess what? I was able to make them vegan quite easily! Vegan or not, your family will fall in love with these rolls… [Read More]
Week 19: Holiday Pains…and Gains
Plus a Care-Free Lentil Curry Recipe!

This past week seemed to pass very quickly. We kept ourselves very busy with work and holiday activities, and also managed to get some running in too! One of the ways I tend to make my life easier during the week is taking the time to prepare a large batch of food on Sunday that will last me throughout the week for lunch. This week, I decided to take a break from my normal Tex-Mex style of chili and make what I like to nickname “Indian chili” or as most would call…curry! [Read More]
Keeping Up Motivation Over the Holiday Season…
Plus a Great Gnocchi Recipe for Leftover Butternut Squash!

Once again, hope everyone is enjoying their holiday weekend. Mark is back off to work today, and I’ll be back to work tomorrow, so…back to the grind…until Christmas! This past week actually proved to be easier to keep up our routine than we would have thought. With the multitude of “Turkey Trots” across the country, it’s hard not to find a race to keep up your fitness level over the holiday (not to mention allow you more special treats). I digress…let’s dive into our week in review! [Read More]
Weeks 13-14: Healing and Easing Back into Routine…
Plus My First Success in Bread Baking!

I must apologize for not posting my update last week as I had promised. I was honestly getting into a funk from not working out. Whenever I don’t get the exercise I need, I tend to get really tired, moody and easily frustrated. However, I’m finally out of my boot and easing back into my training, which makes for a much happier Stef! So, In honor of the return to running, I’ll provide you with a recipe for Maple Seeded Bread (for “carb loading”, of course ) in addition to my normal training update. [Read More]
Perfect Pumpkin Pancakes:
Two Ways to Please Any Picky Pumpkin Pancake Eater

I’ve been promising friends for quite some time to post my “perfect pancake” recipe that I’ve been using week in and week out for the past 6 months and the day has finally arrived (with added seasonal flare)! These pancakes are healthy, tasty, and reheats like a dream as leftovers! With a seasonal twist of pumpkin, these can’t be beat for healthy eating for the fall… [Read More]
Quick and Tasty Soup for a Light Lunch!

On Thursday, I left work just before lunch in order to get a lot of housework done and get a nap (i.e. attempt to catch up on sleep) after my week on the rig. I had already eaten a piece of the decadent Vegan Mocha Cake I made the evening before, plus way too much butter icing when icing the cake, so I needed a quick, healthy, and easy lunch to make that day…black bean soup would just do the trick! Getting Back to Basics Bake Sale and Another Milestone Accomplished!

This week was broken up a bit by a four-day weekend for me for Labor Day (which Mark unfortunately had to work), but with Mark away, it gave me an excellent opportunity to “Labor over Labor Day” to bake for my “Monday Bake Sale” (Tuesday this week for obvious reasons…). Inspired to keep a theme going, I decided to do cookies this week, but instead of experimenting as I normally do, I decided to get “Back to Basics” with Basic Chocolate Chip Cookies and Oatmeal Raisin Cookies. We are keeping on track with our training as well, I’ve introduced Mark to yoga, which we plan on doing together at least once a week. We also participated in the Brian O’Neill’s Pub Run, which is a weekly 5k held on Tuesday evenings at Rice University. [Read More]
The “B4 Burger”: You Won’t Believe it’s Nearly Meatless!

Labor Day…the day that (most) Americans celebrate the Labor Party. Well, actually it is now more of a celebration of the end of summer…but not here in Houston, where temperatures are still commonly getting up into the mid-90′s (today included)! Mark had to work today, so that left me to my own devices, yielding a lot of baking and preparing for dinner. Tonight’s dinner was the B4 Burger, recipe courtesy of the Austin American Statesman, served alongside sweet potato fries and grilled corn on the cob. Topped off with a nice cold beer, and you’ve got one awesome meal to celebrate! [Read More]
Challenges Begin and a New Tasty Quick Bread Recipe

Week three has come and gone with some success, and some new challenges posed to us. Fundraising has gone well and we are settling well into our schedule (as has our new pup, Sasha). However, I’ve had a reoccurring overuse injury that I hope won’t slow me down in the weeks to come… [Read More]
Week 2: Building the Routine…and the Beginning of Fundraising
Plus a Flavorful, Easy Vegan Meal for a Busy Weeknight (and a special surprise)!

This week I was back to “business as usual” with the end of my training class last week. So I was back in the office and required to fit all of my exercise in during my lunch breaks (still too hot to run outside in the evenings in Houston for me…plus we got a lot of much needed rain this week).
