Peanut Butter and Jelly Pancakes

After a Week of Frustration and Stress, a Quite Relaxing Sunday Morning!

pancake3

There are a few things that I couldn’t wait for when I moved into my new house. One was being able to sit on the porch on a relaxing Sunday morning with a coffee, breakfast, and NPR. Today, I made that dream come true! I even tried making a new variation of my “tried and true” pancake recipe (not published yet for some reason) for the occasion. Thus, my “patented” Peanut Butter and Jelly Pancakes are born! [Read More]

Healthy Ice Cream Sandwich

A Truly Simple and Satisfying Treat for a Hot Summer Day

cookie2

We’ve officially entered the dog days of summer in Houston…nearly a continuous week of 90+ temperatures (most over 95F), no rain, and no relief from the heat in the short-term forecast. I normally don’t like ice cream, but today was a day that I just really needed something to cool myself down after our evening walk (that may be going away soon…too hot…). I had inspiration from the whole wheat sugar cookies I found at the Wheat Council website. Boy am I glad I found that base cookie recipe…so versatile and it will be making many repeat appearances on my blog in various forms… [Read More]

Chicken Taco Salad with Homemade Dressing

Chicken Taco Salad with Creamy Cilantro Lime Dressing: Yum!

salad3

It’s hard to develop a salad that is satisfying as a stand-alone dinner. However, it’s not impossible and I think I succeeded with this taco salad I made a few weeks ago. It was delicious that night and provided plenty of leftovers for lunches to come! Plus, the light, spicy and creamy cilantro lime dressing I developed for this salad is perfect for summer…It not only satisfied me for dinner, but also satisfied my husband, a tough feat to accomplish! Mud Maxx 5k

Fun in the Mud and an Awesome Summer Salad!

hosed_off

Today was the most satisfying run I’ve completed to date…the Mud Maxx 5k! This was the first year of the race, benefiting the Shriners Hospital, but the organizers did a good job getting most everything straightened out and the run went rather smoothly. The object of the race was not time (it was untimed), but to have fun and get as muddy as you could (given that we haven’t had rain in weeks, it wasn’t too muddy though). I’m also going to share with you my after-race lunch. A leftover mediterranean-style bulgar wheat salad we made last night that was just so delish I have to share it’s goodness with the world! Turkey Burgers with Homemade Whole Wheat Buns

Turkey Burgers on Homemade Whole Wheat Buns, Served with Zucchini “Fries”

Or, Why I’m Reluctant to go Back to Store-bought Buns…

Last weekend, I had the hankering to bust out the grill and grill up a nice burger…

Well, I’m avoiding ground beef right now, and didn’t have any ground bison defrosted, but we did have freshly ground turkey in the fridge, just waiting to be made into scrumptious turkey burgers! I decided this was my chance to modify my black bean turkey burger recipe I posted a few months ago…and man these were great! Even reheats well (had the leftover burger for lunch today, 3 days later…)…all in all, a keeper recipe! [Read More]

Breakfast Cake

“Breakfast” Cake…Because Why Not Cake For Breakfast?

decorate4

What makes a “breakfast cake”??? Well, in this case, my co-workers were highly anticipating my arrival with my strawberry themed cake and couldn’t wait to eat it…for breakfast! I thought that was an ok proposition, as you’ll see, this cake is more of a quick bread than a cake anyway, so it is fit to eat anytime of the day! [Read More]

Peanut Butter and Honey Granola Bars

My Quest for a Quick and Fool-Proof Granola Bar Has Ended…

granola2

You can tell by now from my recipes, that I like to make quick and easy snacks for when life takes you on the run (or not, I love eating these at my desk at work also: see protein bars and granola bars). I’ve also had problems with adapting granola bar recipes to be easy to make in a city like Houston with a humid climate. This recipe I found is the most highly adaptable and forgiving granola bar recipe out there! I just need to share my love of this recipe with the internet world at large! [Read More]

Homemade Applesauce!

Homemade Applesauce, Another Race, and Another Mentor Lost…

apple2

It’s been a busy week and starting off a busy weekend! I love to be busy…so there is much to say and not so much time to say it…

First, I wanted to post my first experience in making homemade applesauce. It’s quick, very easy, and much healthier for you than the sugar-laden counterparts you buy at the grocery…Second, a quick recap of my latest 5k I ran this morning…and finally, remembering another mentor in my life who just passed from pancreatic cancer (the second this year from the disease)… [Read More]
