After a Week of Frustration and Stress, a Quite Relaxing Sunday Morning!
There are a few things that I couldn’t wait for when I moved into my new house. One was being able to sit on the porch on a relaxing Sunday morning with a coffee, breakfast, and NPR. Today, I made that dream come true! I even tried making a new variation of my “tried and true” pancake recipe (not published yet for some reason) for the occasion. It’s hard to develop a salad that is satisfying as a stand-alone dinner. However, it’s not impossible and I think I succeeded with this taco salad I made a few weeks ago. It was delicious that night and provided plenty of leftovers for lunches to come! Plus, the light, spicy and creamy cilantro lime dressing I developed for this salad is perfect for summer…It not only satisfied me for dinner, but also satisfied my husband, a tough feat to accomplish! Today was the most satisfying run I’ve completed to date…the Mud Maxx 5k! This was the first year of the race, benefiting the Shriners Hospital, but the organizers did a good job getting most everything straightened out and the run went rather smoothly. The object of the race was not time (it was untimed), but to have fun and get as muddy as you could (given that we haven’t had rain in weeks, it wasn’t too muddy though). Or, Why I’m Reluctant to go Back to Store-bought Buns… Last weekend, I had the hankering to bust out the grill and grill up a nice burger… Well, I’m avoiding ground beef right now, and didn’t have any ground bison defrosted, but we did have freshly ground turkey in the fridge, just waiting to be made into scrumptious turkey burgers! I decided this was my chance to modify my black bean turkey burger recipe I posted a few months ago…and man these were great!
