Bulgar Wheat Rolls

Bulgar Wheat Rolls:

You Won’t Believe They’re Whole Grain (and Vegan to boot…)

bulgar_group

I must admit, I love bread…soft, warm, yeasty rolls fresh out of the oven. However, some just don’t seem to cut the mustard. Many are dry, brick-like, and *gasp* made fully with All Purpose Flour (APF for the non-foodies)! Well, I have fallen head over heals for these rolls, and guess what? I was able to make them vegan quite easily! Vegan or not, your family will fall in love with these rolls… [Read More]

Training Update – Week 10

Breaking Records and Feeling Sore!

cookie1

It’s been an interesting and tiring week in our household…our schedule pretty much has been: work, run, eat, sleep, repeat! The run part has finally started taking a bit more of a toll on my body, as has allergy season, which has hit me with full impact. We also were breaking records, both Mark and I ran the Susan Komen Race for the Cure on Saturday and broke our 5k race records (Mark by over 3 minutes)! All of these factors put together has yielded a very run down Stef…but not run down enough to keep me from baking for my Monday Bake Sale! This week I was feeling like I was missing home and all that is fall…so…I decided to use apples as the central theme for this week’s bake sale (apple cinnamon cookies shown above)! [Read More]

Black Bean Soup

Quick and Tasty Soup for a Light Lunch!

soup2

On Thursday, I left work just before lunch in order to get a lot of housework done and get a nap (i.e. attempt to catch up on sleep) after my week on the rig. I had already eaten a piece of the decadent Vegan Mocha Cake I made the evening before, plus way too much butter icing when icing the cake, so I needed a quick, healthy, and easy lunch to make that day…black bean soup would just do the trick! Team in Training – Week 2

Week 2: Building the Routine…and the Beginning of Fundraising

Plus a Flavorful, Easy Vegan Meal for a Busy Weeknight (and a special surprise)!

stef_2

This week I was back to “business as usual” with the end of my training class last week. So I was back in the office and required to fit all of my exercise in during my lunch breaks (still too hot to run outside in the evenings in Houston for me…plus we got a lot of much needed rain this week). Healthy Ice Cream Sandwich

A Truly Simple and Satisfying Treat for a Hot Summer Day

cookie2

We’ve officially entered the dog days of summer in Houston…nearly a continuous week of 90+ temperatures (most over 95F), no rain, and no relief from the heat in the short-term forecast. I normally don’t like ice cream, but today was a day that I just really needed something to cool myself down after our evening walk (that may be going away soon…too hot…). I had inspiration from the whole wheat sugar cookies I found at the Wheat Council website. Boy am I glad I found that base cookie recipe…so versatile and it will be making many repeat appearances on my blog in various forms… [Read More]

Raspberry “Mousse”

Fake Mousse is Better than No Mousse at All…

mousse

I must admit, this is not one of my tastiest or most creative recipes…but it gets the job done on cooling you down on a hot summer day! Last week we had a lot of raspberries around, as they were on sale at the grocery store and couldn’t pass up a deal when we’re pinching pennies…Thus the raspberry “mousse” was born… [Read More]

Chicken Tortilla Soup

My First Attempt at Chicken Tortilla Soup: A Rousing Success

soup3

A few weeks ago (probably about 3 or so by now), I noticed I had a lot of semi-related things in the fridge to make for my “Batch Cooking Sunday”. Not quite sure what to do, I decided that I was going to at least boil some fresh chicken breasts in the fridge to make shredded chicken. Well, that got me thinking about trying my hand at soup…chicken tortilla soup to be exact! I searched far and wide on the internet for some base recipes to work with and couldn’t find any that quite fit the bill for me…so, I took matters into my own hands (which can be good or bad…)! We didn’t have any fresh tomatoes, so I decided to try a chili base to my soup…which ended up being a great choice! [Read More]

Homemade Applesauce!

Homemade Applesauce, Another Race, and Another Mentor Lost…

apple2

It’s been a busy week and starting off a busy weekend! I love to be busy…so there is much to say and not so much time to say it…

First, I wanted to post my first experience in making homemade applesauce. It’s quick, very easy, and much healthier for you than the sugar-laden counterparts you buy at the grocery…Second, a quick recap of my latest 5k I ran this morning…and finally, remembering another mentor in my life who just passed from pancreatic cancer (the second this year from the disease)… [Read More]

Greek Style Frittata

Yet Another Use for Egg Beaters that Tastes Delicious!

plated11

Before you jump on me about cholesterol and the myths behind eggs being a source of bad cholesterol…hear me out… I like egg beaters. I love the taste, love the way you don’t have to beat them, just shake, measure, pour, done! I also love omelets, but have never tried making a frittata before. Well, this weekend, I was given inspiration from everyone on Foodgawker and Tastespotting with their lovely pictures of frittatas to make my first frittata, a greek-style one! [Read More]
