Fun in the Mud and an Awesome Summer Salad!
Today was the most satisfying run I’ve completed to date…the Mud Maxx 5k! This was the first year of the race, benefiting the Shriners Hospital, but the organizers did a good job getting most everything straightened out and the run went rather smoothly. The object of the race was not time (it was untimed), but to have fun and get as muddy as you could (given that we haven’t had rain in weeks, it wasn’t too muddy though). Yet Another Use for Egg Beaters that Tastes Delicious!
Before you jump on me about cholesterol and the myths behind eggs being a source of bad cholesterol…hear me out… I like egg beaters. I love the taste, love the way you don’t have to beat them, just shake, measure, pour, done! I also love omelets, but have never tried making a frittata before. What Would Jesus Eat? (Plus, Happy Easter!)
This year we had to celebrate Easter a day early (Mark works today), so we had dinner a day early…This year we tried something different than the old stand-by of ham and potatoes. We love ham and potatoes, but given that we had an afternoon to prepare a nice meal, we decided to try our hand at lamb chops! That gave me the inspiration to make it a Mediterranean/Middle Eastern themed meal…which is closer to what Jesus would have actually eaten (maybe…). It came out delicious!
We paired our lamb chops with a mint yogurt sauce, with sides of Israeli couscous (pearl couscous), and our lovely Greek salad. This paired nicely with Two Hands vineyard’s Angel Hands Shiraz (2007). [Read More]
Greek Food, Fast in San Antonio
On Thursday, we arrived in San Antonio just in time for a late(ish) lunch. Without an idea of where to go first, we stopped by the B&B (to see the area) and checked UrbanSpoon on my iPhone to see what was quick, easy, and good in the area. I decided to make a big sacrifice for my husband, a huge fan, by going with him to the Alamo Drafthouse (best movie theater ever) to watch the finale.
