I must apologize for not posting my update last week as I had promised. I was honestly getting into a funk from not working out. Whenever I don’t get the exercise I need, I tend to get really tired, moody and easily frustrated. However, I’m finally out of my boot and easing back into my training, which makes for a much happier Stef! Week 11: Getting into Double Digit Runs…and Learning to Slow Down

This week was the roughest week yet for us! Saturday was our first double digit run, clocking in at 10 miles! I felt great during the run for the most part and completed it at a great pace (1:34:36; ~9:30 min/mi pace). However, the rest of the day wasn’t as good. After our weekly brunch pilgrimage to Ziggy’s, I noticed that my ankle began to swell up…a lot! So, we did what we know is best for swelling, RICE! Quick and Tasty Soup for a Light Lunch!

On Thursday, I left work just before lunch in order to get a lot of housework done and get a nap (i.e. attempt to catch up on sleep) after my week on the rig. I had already eaten a piece of the decadent Vegan Mocha Cake I made the evening before, plus way too much butter icing when icing the cake, so I needed a quick, healthy, and easy lunch to make that day…black bean soup would just do the trick! Breaking in our New House with a Good Old Fashioned Party…

So, we are well on our way to putting together our new house. We now have phone (like it matters in this day and age), DSL (matters), and cable (but not yet strong enough for digital…), and even a few curtains up (custom curtains = serious $$$)! I was craving something a little bit different on Saturday.
