Another Week, Another Step Closer…

Weeks 13-14: Healing and Easing Back into Routine…
Plus My First Success in Bread Baking!

I must apologize for not posting my update last week as I had promised. I was honestly getting into a funk from not working out. Whenever I don’t get the exercise I need, I tend to get really tired, moody and easily frustrated. However, I’m finally out of my boot and easing back into my training, which makes for a much happier Stef! Week 12: Blueberry Spelt Muffins and Das Boot!

My personal training focus this week has shifted from my previous weeks of training. Healing is now my primary focus! Last week I mentioned how I’ve been temporarily grounded from my training by my podiatrist due to tendinitis in my posterior tibial tendon (left ankle). Well, I’ve taken his advice to heart and did something I haven’t done in ages…take a break from exercise (*gasp*). It’s been really hard, I’ve gotten terribly stir-crazy at times, and have slept a lot. Breaking Records and Feeling Sore!

It’s been an interesting and tiring week in our household…our schedule pretty much has been: work, run, eat, sleep, repeat! The run part has finally started taking a bit more of a toll on my body, as has allergy season, which has hit me with full impact. We also were breaking records, both Mark and I ran the Susan Komen Race for the Cure on Saturday and broke our 5k race records (Mark by over 3 minutes)! All of these factors put together has yielded a very run down Stef…but not run down enough to keep me from baking for my Monday Bake Sale! Quick and Tasty Soup for a Light Lunch!

On Thursday, I left work just before lunch in order to get a lot of housework done and get a nap (i.e. attempt to catch up on sleep) after my week on the rig. I had already eaten a piece of the decadent Vegan Mocha Cake I made the evening before, plus way too much butter icing when icing the cake, so I needed a quick, healthy, and easy lunch to make that day…black bean soup would just do the trick! Week #9: Keeping up Motivation Offshore + Vegan Mocha Cake Recipe

I’ll just start out with that this week was hard….really hard…but I’ve come out on the other end, no worse for the wear (I think…)! I was offshore until Wednesday, but luckily got home just in time for track practice. However, that required the most of my miles this week to be logged on the trusty rig treadmill. After track practice and dinner, I decided (like my normal crazy self) to bake a cake for a colleague who was leaving us for another company. So, I baked a “Vegan” Mocha Cake (the cake itself was vegan, but not the buttercream which is easy enough to “veganize”). Back on the Rig…and a Tasty Frozen Yogurt Recipe

Last week I described how my work took me offshore to a drilling rig in the middle of the Gulf of Mexico…and how I quickly discovered, they weren’t ready to start drilling and was sent home again. Well, I’m back on the rig, and guess what? They still aren’t ready to drill, but are getting there, slowly but surely! That means having to modify my training once again and keeping my energy and spirits up enough to keep on going and keep my body nourished best I can with the sub-par quality of rig food. [Read More]
Week 7: Out and Back…Trials and Tribulations of the Oil Field (Plus another Bake Sale…)

I apologize for the late posting this week. I spent most of my week this week traveling, to and from New Orleans and to and from a drilling rig in the Gulf of Mexico. It was my first time offshore, and it ended pretty quickly after it started…drilling became delayed and therefore I was no longer needed out there and was asked to return in a “week or so”. Getting Back to Basics Bake Sale and Another Milestone Accomplished!

This week was broken up a bit by a four-day weekend for me for Labor Day (which Mark unfortunately had to work), but with Mark away, it gave me an excellent opportunity to “Labor over Labor Day” to bake for my “Monday Bake Sale” (Tuesday this week for obvious reasons…). Inspired to keep a theme going, I decided to do cookies this week, but instead of experimenting as I normally do, I decided to get “Back to Basics” with Basic Chocolate Chip Cookies and Oatmeal Raisin Cookies. We are keeping on track with our training as well, I’ve introduced Mark to yoga, which we plan on doing together at least once a week. We also participated in the Brian O’Neill’s Pub Run, which is a weekly 5k held on Tuesday evenings at Rice University. [Read More]
Bring on the “Hills” (and the Baked Goods)!

This week started our second month of training and with that came our second third track practice where we were charged with a new challenge…hills! Everything else has been pretty quiet…we were unable to climb this week due to the pickup of our old fridge to be delivered to my parents in Pennsylvania (took forever). We’ve been really busy with training and work, so we actually had a whole 2 day period where our television wasn’t turned on at all (it’s normally on for only ~30 min/day right now…will change with the advent of College Football season). Fundraising has gone well this week, with the theme being contrast…Deborah Madison’s Banana Oat Muffins (diabetic-friendly) and Honey Whole Wheat Poundcake with Blueberry and Lemon Icing (shown above).
