Training Update – Week 9

Week #9: Keeping up Motivation Offshore + Vegan Mocha Cake Recipe

cake1

I’ll just start out with that this week was hard….really hard…but I’ve come out on the other end, no worse for the wear (I think…)! I was offshore until Wednesday, but luckily got home just in time for track practice. However, that required the most of my miles this week to be logged on the trusty rig treadmill. After track practice and dinner, I decided (like my normal crazy self) to bake a cake for a colleague who was leaving us for another company. So, I baked a “Vegan” Mocha Cake (the cake itself was vegan, but not the buttercream which is easy enough to “veganize”). Read on to hear about the highs and lows of this week and for my decadent cake recipe (which by the way, is NOT healthy). [Read More]

Back on the Rig…and a Tasty Frozen Yogurt Recipe

froyo

Last week I described how my work took me offshore to a drilling rig in the middle of the Gulf of Mexico…and how I quickly discovered, they weren’t ready to start drilling and was sent home again. Well, I’m back on the rig, and guess what? They still aren’t ready to drill, but are getting there, slowly but surely! That means having to modify my training once again and keeping my energy and spirits up enough to keep on going and keep my body nourished best I can with the sub-par quality of rig food. Getting Back to Basics Bake Sale and Another Milestone Accomplished!

cookie_porch1

This week was broken up a bit by a four-day weekend for me for Labor Day (which Mark unfortunately had to work), but with Mark away, it gave me an excellent opportunity to “Labor over Labor Day” to bake for my “Monday Bake Sale” (Tuesday this week for obvious reasons…). Inspired to keep a theme going, I decided to do cookies this week, but instead of experimenting as I normally do, I decided to get “Back to Basics” with Basic Chocolate Chip Cookies and Oatmeal Raisin Cookies. We are keeping on track with our training as well, I’ve introduced Mark to yoga, which we plan on doing together at least once a week. We also participated in the Brian O’Neill’s Pub Run, which is a weekly 5k held on Tuesday evenings at Rice University. [Read More]

Training Update – Week 5

Bring on the “Hills” (and the Baked Goods)!

cake2

This week started our second month of training and with that came our second third track practice where we were charged with a new challenge…hills! Everything else has been pretty quiet…we were unable to climb this week due to the pickup of our old fridge to be delivered to my parents in Pennsylvania (took forever). We’ve been really busy with training and work, so we actually had a whole 2 day period where our television wasn’t turned on at all (it’s normally on for only ~30 min/day right now…will change with the advent of College Football season). Fundraising has gone well this week, with the theme being contrast…Deborah Madison’s Banana Oat Muffins (diabetic-friendly) and Honey Whole Wheat Poundcake with Blueberry and Lemon Icing (shown above).  [Read More]

Week 4: Another Week Down and Some Great News…

Week 4 Video

We’re now in the process of closing in on our first full month of training and so far, so good! My shin splints are slowly getting better (yes, I know rest is best, but I am taking it easy) and our mileage is slowly increasing…Fundraising has hit a bit of a lull, but I think it will naturally have its ups and downs during the season (but still baking…read on for a tasty Cherry Oatmeal Bread recipe). We also got some great news this week from my family that I’ll share with you further in this update! [Read More]

Gluten Free Peanut Choco-Chip Cookies

Peanut Butter Cookies Get a Makeover!

cookie2

A bit over a month ago, we had our housewarming party. One of the recipes that got great reviews from ourselves and our guests was my adaptation on peanut butter cookies! I had a friend who was attended that party that is celiac, thus I wanted to be sure I was able to accommodate her needs (and mine…I love making normal recipes into something unique). Thus were born my Peanut Choco-Chip Cookies! My Mom has been bugging me for this recipe for some time, so my Monday Bake Sale for Leukemia and Lymphoma Society gave me reason to make this one again and post some more representative pictures and the recipe… [Read More]

Challenges Begin and a New Tasty Quick Bread Recipe

Mark_wk3

Week three has come and gone with some success, and some new challenges posed to us. Fundraising has gone well and we are settling well into our schedule (as has our new pup, Sasha). However, I’ve had a reoccurring overuse injury that I hope won’t slow me down in the weeks to come… [Read More]

This week I was back to “business as usual” with the end of my training class last week. So I was back in the office and required to fit all of my exercise in during my lunch breaks (still too hot to run outside in the evenings in Houston for me…plus we got a lot of much needed rain this week). The Journey of 26.2 miles Begins…to Support a Great Cause!

4-7-2007 4-30-24 PM_0263

I mentioned in passing in a previous post that my hubby and I joined Team in Training for our first Marathon, the 2010 Chevron Houston Marathon. Well, the insanity of training has begun, as has fundraising…I’m not so worried about the insanity of training. I’m a glutton for punishment (see Mudd Maxx 5k, and other race posts), and enjoy promoting a healthy lifestyle. However, fundraising and cheerleading has never been one of my stronger suits. Asking for money, nah…I’d rather earn it! So, what are my reasons for reaching out of my comfort zone to fundraise for my first marathon? The man pictured above, the first man of my life….my father!
